POCKET KNIVES, ESSENCE OF LETTUCE, CHIRIMOYA AND CITRUS

The razor clams are a mollusk with a very fine taste, a very pleasant texture, which are found in almost all fishmongers and whose price is very affordable.
With them you can make countless dishes, as a main ingredient or as a side dish. That is why we want to show you this simple recipe to make a dish where the Razor is the queen but with citrus and sea flavors that make them a real delight.
Ingredients:
- 16 knives
- 2 custard apples
- 1 tablespoon of sea lettuce essence
- Lime, orange and lemon zest
- Olive oil
- Buds and flowers Fennel
- Fine wine from the County of Huelva
Elaboration:
- Open the blades with the wine and lemon, clean and reserve cold with the cooking broth
- Clean the custard apple, remove the seeds and mash to make a puree
- We assemble the dish with a base of custard apple puree and the razor clams. We decorate with the buds, flowers and a little fennel.
- We season with the zest of citrus fruits and the essence of seaweed, and we correct the salt point with the seaweed salt.
